Maw Maw’s Mini Sweet Potato Pie

This recipe is dear to my heart maw maw’s sweet potato pie are a holiday must and favorite
classic! Watch out Patti Labelle there’s a pie in town! I traveled all the way to New Orleans to
bring you guys these finger-licking pies
You’ll need:
4 boxes of Dutch Ann frozen tarts
7 sweet potatoes
Half a cup of light brown sugar
2 sticks of butter
2 cups of white sugar
¼ teaspoon of ground ginger
Dash of salt
1 teaspoon of nutmeg
6 eggs
Half a cup of flower
Half of cup of condensed milk
1/8 teaspoon almond extract
½ teaspoon of lemon extract
1 tablespoon of vanilla
Begin by boiling peeled sweet potatoes until they are tender, you will know when they are
ready when you can insert a knife into them
Slice two sticks of butter add to potatoes (cover and let butter melt)
Add 2 cup of white sugar add ½ cup of light brown sugar (beat them)
Add ½ cup of flower and a dash of salt
Whip 6 eggs in separate bowl
Begin to mix it all up into a soft puree (include whipped eggs)
Add Ginger, Nut Meg, and ½ cup of Condensed Milk (mix)
Add Almond Extract, Lemon Extract, and Vanilla
*Begin to fill mini tarts to top (they will rise in the over so be careful not to over fill)
Set oven to 325 degrees
Bake pies for 45-50 minutes until piecrust is golden brown
